All about Chives and Chinese Chives

Today i would like to share some information about Chives.

Chives:In culinary terms, chives are really classed as a herb, but as members of the onion family they are worth mentioning here.As anyone who has grown them knows, chives are tufts of romantic grass with pretty pale lilac flowers, which are also edible.

Preparing and Serving:Chives are often snipped with scissors and added to egg dishes,or used as a garnish for salads and soups, adding a pleasant but faint onion flavor.Along with parsley, tarragon and chervil, they are an essential ingredients of fines herbs.Chives are also a delicious addition to soft cheeses, far nicer than a commercially bought cheeses, where the flavor of chives virtually disappears.Stir also into soft butter for an alternative to garlic butter. This can then be spread on to bread and baked like garlic bread. If adding to cooked dishes, cook only very briefly, otherwise their flavor will be lost.

Chinese Chives:Chinese chives, sometimes called garlic chives, have a delicate garlic flavor, and if you see them for sale in your local Chinese supermarket, they are worth buying as they add a delicate onion flavor to stir-fries and other oriental dishes.

Preparing and Serving:Use them as you would chives-both the green and white parts are edible. They are also delicious served on their own as a vegetable accompaniment.

This is for Buying and Storing:For both types of chives, look for plump, uniformly green specimens with no brown spots or signs of wilting. They can be stored for up to a week in the fridge.Unopened flowers on Chinese chives are an indication that the plant is young and therefore more tender than with fully opened flowers.

Hope this will help you...

Fats and Oils

For general frying, choose oils high in Polyunsaturates.Sunflower, rape seed and groundnut have the lightest flavors, and these are the ones preferred by gourmet cooks.Corn oil and blended vegetables oils are stronger in flavour.Increasingly popular is olive oil.Not only highly prized for flavour,it also has properties beneficial to health, being high in mono-saturates,which are thought to help reduce blood cholesterol levels. Two main qualities are available pure olive oil, which is excellent for general cooking, and extra virgin oil, which is made from the first cold pressing of the olives, producing a full-flavoured,almost peppery taste. It is ideal for dressing salads and as a healthier substitute for butter.Aromatic seed and nut oils, such as sesame, walnut and hazelnut, are too heavy and expensive for general use,but they are ideal for trickling on hot vegetables, pulses or pasta.
All fats, unless labelled specifically "lower" or "reduced fat" contain approximately the same amount of calories. It is the type of fat within them that counts when it comes to our health.Sunflower and olive oil spreads are lower in harmful saturates and higher in healthier polyunsaturates and mono-saturates.Spreads labelled "low fat"or "reduced fat" will have more added water, which helps to reduce the calories but almost makes them more difficult for frying and baking.
Fats and oils are important in out diets, contributing vital vitamins, such as A,D and E,so do not cut them altogether.Include them in moderate amounts.Check pack labels for full nutritional details, and remember to restrict your fat intake to no more than one-third of your total daily of calories.

Superfood For Everyday Health

When I came to the US and married, my husband introduced me to a new way of living, which is multifaceted.  One of the things he introduced me to was this concept of superfood.  Every morning he had this routine of taking in powdered superfood.  The product he used then, and that the whole family uses now, is called "Greens Today."  It's a mix of freeze dried vegetable, fruit and grass (ie wheat, barley) juices, herbs, etc.  Below you can see a photo of the bottle.

At first, I have to admit, I did not like the taste.  I could only take it with juice or soy milk- another one of his introductions.  Over time, I got used to the taste and could take it with water, which is what is recommended.

After some time of starting my regimen, maybe a couple of months or so, I began to notice some changes in my body.  For one, I no longer suffered from the agony of dysmenorrhea.  Yaaaay! No more cramping during my period!  Another wonderful thing that occurred is that I had more energy and I felt better overall.

So, my husband was leading me right after all.  Thanks honey!  At first, all I could think about is that greeny, unfamiliar taste, uggh.  But, I guess my taste buds got used to the spirulina, broccoli and all the other superfoods in the mix.  My kids got to the point that every morning, when they saw their papi taking his daily dose of greens today in the kitchen, they would ask for their portion too.  Of course he acted like it was the tastiest thing in the world to get them to first take it....

My husband tells everyone he can about greens today.  Everyone who tries it, has said that he/she can tell a difference after taking it.  His mother said that when she runs out of it, she can tell that her energy level decreases.  If you want to try greens today for yourself, you can go  to websites such as  www.vitacost.com to get it at a nice warehouse price.  It's much cheaper than at your retail healthfood store, we found.

Happy superfooding! ;-)

Yours Truly,

Mira
